Also known as Pitaya, dragon fruit is an incredibly beautiful fruit with intense color and shape, magnificent flowers, and delicious flavor. Round fruit, often red with prominent scales. The thin rind encloses a large mass of sweet-tasting white or red pulp and small black seeds. Some varieties are pink or yellow. Native to Mexico and Central and South America, these epiphytic, vine-like cacti are also grown in Southeast Asian countries such as Vietnam and Malaysia. They are also found in Taiwan and Israel.

The pulp of the fruit is delicious eaten fresh and cold, and is delicious with lemon or lime juice or ice cream. Use the pulp in jams or as a base for drinks. The color and shape of the fruit make them a very attractive garnish. Its striking appearance would add style to any dish and you could add the fruit to almost any other fruit combination without worrying about upsetting the balance of flavors. Description: Dragon fruit, also known as pitaya, is native to South America. It comes in red and yellow varieties, both with white or pink interiors, dotted with small black seeds, which are also edible. It can be eaten raw or used as a spread, salads, sorbets or juice.

Nutritional value:Red-fleshed varieties contain lycopene, which is a natural antioxidant known to fight cancer, heart disease, and lower blood pressure. Despite its health benefits and spectacular appearance, the fruit has gone virtually unnoticed for centuries. Today it is Vietnam's main fruit export
