Also known as Pitaya, dragon fruit is an incredibly beautiful fruit with intense color and shape, magnificent flowers, and delicious flavor. Round fruit, often red with prominent scales. The thin rind encloses a large mass of sweet-tasting white or red pulp and small black seeds. Some varieties are pink or yellow. Native to Mexico and Central and South America, these epiphytic, vine-like cacti are also grown in Southeast Asian countries such as Vietnam and Malaysia. They are also found in Taiwan and Israel.

The pulp of the fruit is delicious eaten fresh and cold, and is delicious with lemon or lime juice or ice cream. Use the pulp in jams or as a base for drinks.
